Dill Aquavit from Esrum Sø Micro Distillery (Stone Grange) is the largest renewal within the aquavit’s history since Brøndum developed Caraway Aquavit nearly 200 years ago. AgroTech participates in the product’s further development.

Unique taste and scent experience

As many other producers Stone Grange has learned that the raw materials’ quality is crucial for the final product’s quality. The purpose of this project is to examine the composition of dills’ ingredients, which contributes to the taste, and how these ingredients are affected by different production parameters as e.g. growing conditions. Ingredients from Anethum Graveolens grown on different locations in Denmark are identified and compared towards the production of Dill Aquavit.

Stone Grange and their suppliers expect to find out which dill sort is the most optimal for making Dill Aquavit as well as the best growing conditions and the most favourable harvest time.
